Dark, leafy greens have great nutrient-rich profiles that vary with each individual green, but it’s important to eat a balance of healthy foods to ensure you’re getting all your nutrients, instead of overloading on just a few!

Some dark, leafy greens you might be familiar with include spinach, kale, broccoli, cabbage, and bok choy. Here is a list of some underappreciated dark, leafy greens you might also want to try:
  • Microgreens
  • Collard Greens
  • Swiss Chard
  • Arugula
  • Beet Greens
When it comes to dark, leafy greens, the darker and greener, the better… and fresh matters too! Greens from the farmers’ market or from your backyard garden are always best as they were picked only a day or two before you ate them. As time goes by and produce sits on the shelves, nutrient density and the nutritional benefits get depleted over time, so try to eat them as soon as possible.

5 Dark, Leafy Greens to Try
Microgreens
These are very young greens that have just sprouted. Researchers from the Department of Nutrition and Food Science at the University of Maryland performed an in-depth analysis of the nutritional quality of microgreens. They concluded that “microgreens contain considerably higher concentrations of vitamins and carotenoids than their mature plant counterparts.” For instance, according to this study, red cabbage, garnet amaranth, and green daikon radish microgreens contain high levels of essential vitamins such as E, C, and K.

Consider reaching for some organic microgreens to throw in your salads, inside your wraps, or as a decorative nutritional boost on top of your favorite bowl of soup.

Collard Greens
If you’ve ever tried finding a wrap or tortilla made with just a few, pronounceable ingredients, you know it’s nearly impossible! Consider making a wrap using these big greens instead. Collard greens are a nutritious, dark green solution, and their leaves are huge!

Swiss Chard
Swiss chard leaves are large, too, and make a great “tortilla.” They also taste great lightly sautéed. Try one pound in a frying pan with 1 tbsp. of coconut oil (or your oil of choice). Plus, just one large leaf of raw Swiss chard is a great source of vitamins A, C, and K, as well as a multitude of other micronutrients, vitamins, and minerals.

Arugula
Not only is arugula a great low-calorie option with only 10 calories in 2 full cups, it — like other leafy, green vegetables — can help support cardiovascular health. It’s also great to incorporate when you're looking for a bolder flavor in salads, and it is a great green to sauté or lightly steam with some herbs, spices, and a splash of lemon juice as a side dish.

Beet Greens
Do you throw yours away? These greens are potentially one of the easiest to overlook so keep them on your radar. They taste similar to kale! They are great in salads, blended in smoothies, or lightly sautéed.

They’re also full of essential minerals your body needs, including 44.5mg of calcium, 26.6mg of magnesium, 290mg of potassium, as well as trace amounts of zinc, manganese, and iron in just one cup of raw greens.

It is so easy to get in a rut with what you’re familiar with, but there are so many underappreciated greens patiently waiting for you to incorporate them into delicious, nutrient-dense meals. Get creative and have fun with your food!

The Today Show's Transform :20 Participants Give 1-month Update on Their Fitness Challenge

On February 25, Beachbody's Shaun T beamed with pride as NBC's Today Show hosts Kathie Lee Gifford and Hoda Kotb checked in with his three Transform :20 program participants who are doing the program on a national stage. They shared updates on their weight loss journeys after a month on the plan, which challenges them to 20-minute workouts, six days a week for six weeks.

Renee, 45, has lost 9 pounds and 21 inches.

Kotb asked, "So, what's the tip? Give us the takeaway from so far."

"It's really learning how to navigate real life and incorporating all of this," Renee said. "I'm a mom, I had my birthday, it was Valentine's day, kid's activities - and this is so doable," she said. "I do mine in the morning before the kids get up. It's my time; it's for me."

Participant David has lost 23 pounds and 19 inches in four weeks.

"The 20 minutes is key," he said. "It's six days a week, but the 20 minutes, you can find it.... I haven't missed. I haven't cheated either, because you're so motivated. You work out, and you look forward to eating and you're eating properly."

Gina is down 10 pounds and 20 inches. "For me the best thing is to make it integral to my life. At my house when I walk into the door, which I enter through my garage, there are my shoes, there's my towel, there's my workout gear. I don't even go to another room to change; I do it right there in the kitchen."

You can always do 10 to 20 minutes of something, and if you can't do everything, if you just do 5 minutes of something it continues that momentum. My next tip is make food your best friend. Would you hang out with somebody that was making you feel bad on the inside and outside? No. So you have to choose foods that are going to make you feel really good later; don't just eat for the tongue eat for the body and how you're gonna feel. My last tip is sit instead of quit. So many people start quitting instead of sitting down and literally celebrating those momentums and those monumental moments that they had along the way. So just sit down, breathe, carry the momentum, and celebrate what you've done," he said.

"We have two weeks left, and the Conquer Phase is all about sustainability," he said. "With weight loss, most of the time people want results now, but I want you to have results in the future, and that's what 20 minutes will do for you all."

Vegan, makes about 2 1/2 cups

Celebrate March with this flavorful green dip!

1 can white cannellini beans (1 1/2 cups) - drain/rinse in hot water
1 cup kale, fresh or frozen
4 Tbsp extra virgin olive oil
2 Tbsp apple cider vinegar
2 tsp lemon juice + generous pinch of lemon zest
1/2 tsp fine black pepper
3 dashes of cayenne
1/4 cup raw cashews
1 1/2 Tbsp tahini, roasted, organic
1/4+ cup warm water
1/4 cup chopped parsley, flat-leaf
optional: garlic powder or roasted garlic

Add all ingredients to high speed blender or Vitamix. Blend from low to high until silky and smooth. Add a few extra splashes of water if needed to blend smooth. (It will firm up quite a bit in the fridge)

Pour in serving dish and chill in fridge for 1 hour or overnight. You could serve right away or warm if desired as well.

When ready to serve, drizzle a small amount olive oil on top and fresh parsley to garnish and serve with assorted fresh veggies. Source: Happy Healthy Life
