Who Is Jennifer Jacobs?

Jennifer holds a combination of eight fitness and nutrition accreditations from some of the top certifying agencies in the country.

In addition to being certified through the National Academy of Sports Medicine (NASM) as a personal trainer, nutrition coach, and fitness nutrition specialist, she is also a certified indoor cycling instructor through Schwinn and the Athletics and Fitness Association of America (AFAA).

A former senior Peloton instructor known for her functional training workouts and heart-pounding cycling classes, Jennifer will help you stay accountable and unleash your best self.

Gingerbread Protein Pancakes


YIELD: 3 servings, 2 pancakes each

These pancakes are light and fluffy, but thanks to the addition of whey protein, they also pack a high-protein punch. 
And since they’re made without wheat, they’re gluten-friendly, too!

The spice mix of cinnamon, ginger, cloves, and nutmeg creates more than you’ll use in the pancake batter, but you can save it in an airtight container and use it on top of oatmeal or in a Shakeology smoothie to infuse it with that classic gingerbread flavor. 

  • 1 tsp. ground cinnamon
  • 1 tsp. ground ginger
  • 1 pinch ground cloves
  • 1 pinch ground nutmeg
  • 1 scoop vanilla whey protein powder
  • ⅓ cup reduced-fat plain Greek yogurt
  • 4 large egg whites (½ cup)
  • ¼ cup dry rolled oats
  • 2 Tbsp. coconut flour
  • ½ tsp. baking powder
  • 2 tsp. molasses
  • Nonstick cooking spray
  • ¼ medium pear, cut into bite-sized chunks (optional)
  1. To make spice mix, combine cinnamon, ginger, cloves, and nutmeg in a small bowl; mix well. Set aside.

  2. Combine protein powder, yogurt, egg whites, oats, coconut flour, 1 tsp. spice mix, baking powder, and molasses in a medium bowl; mix well.

  3. Heat large nonstick skillet lightly coated with spray over medium heat.

  4. Ladle about ¼ cup batter for each pancake; cook for 2 to 3 minutes, or until bubbles form on top. Flip. Cook for 1 to 2 minutes, or until golden brown and cooked through.

  5. Repeat until all batter is used.

  6. Serve two pancakes topped with pear, if desired, serve immediately.

In October 2011, while on his deathbed, my daddy made this daddy's girl promise him that I'd start taking better care of me so that I could live and not just exist like he was doing. Every day I thank God for answering my prayer request for time freedom and flexibility while still being able to do something meaningful AND keep the ability I had of working from home, especially since the pandemic hit. I don't know about you, but God rarely packages the answers to my prayers in a manner that's within my comfort zone. So a few years ago, when He gifted me with this blessing of helping others make life-changing physical, nutritional, financial, and spiritual transformations, I almost blocked it because He didn't answer my prayer the way I thought it would or even should be answered. Nope, He always packages the answers to my prayers in a way that forces me to grow. He's awesome like that.
 
God has placed a new time-sensitive calling on my heart, and in an effort to be obedient, I'm looking for 50 Lady Leaders and 50 Men Who Lead who want to not only make their own transformations, but to pay it forward and help your community, both geographical and virtual communities, get healthier and wealthier physically, nutritionally, spiritually, and financially. Oh, and this needs to happen by the end of this year.
